Purebred Caspian Beluga Caviar Returns to the U.S. Through Sustainable Farming
For the first time since 2005, purebred Caspian Beluga caviar is now available in the U.S., thanks to Sturgeon Aquafarms, LLC — the only American aquafarm raising Beluga sturgeon. Known for their large, delicate eggs, Beluga sturgeon produce caviar with a signature pop and unmatched richness.
Sturgeon Aquafarms began importing Beluga sturgeon and other species in 2003, just two years before the U.S. banned Beluga imports due to declining wild populations. Since 2009, the farm has been breeding these sturgeon in Bascom, Florida. After decades of dedication and sustainable farming efforts, authentic Beluga caviar is once again accessible in the U.S.
As the only facility in the Western Hemisphere housing this endangered species, Sturgeon Aquafarms plays a vital role in conservation. The farm focuses on breeding success, population restoration, and sharing technology through international collaborations to support the survival of these remarkable fish.
